Description:
Melon mavens assert that tourists in France have been known to pull to the side of the road, drawn to a halt by the incredible scent of a CHARENTAIS MELON field. We have not witnessed this phenomenon first hand, but can believe it to be true. Charentais melons (also known as Cavaillon melons) are a true cantaloupe, globe shaped, around 3 1/2" in diameter and weighing 2 pounds each. Creamy green to golden beige in color with darker longitudinal ribbings, they have flesh the color of the traditional canteloupe. What makes the Charentais melons so special are their superior eating quality and heady, perfumey aroma. Their flesh is softer than that of a cantaloupe, and their flavor is deeper and sweeter. The French traditionally serve Charentais with prosciutto, but also feature them as an hors d'oeuvre by cutting them in half, scooping out the seeds and filling them with a sweet wine such as Barsac, Marsala, Port or Madiera. Yum! These Charentais pictured are the first of the season. Their external color will become less green and their sugar content will go up as the season progresses.

It's a shame that more Americans are not familiar with their attributes. According to Alice Waters in her new book, Chez Panisse Fruit, "Their soft, honeyed character tames the aggressiveness of hot peppers, garlic, and onions; stands up to the assertiveness of anchovies; and is beautifully complemented by the herbaceous flavors of thyme, mint and lavender. The classic Italian combination of figs and prosciutto has led us to explore other combinations of figs with salty or smoky pork and poultry". Waters continues, "(the BLACK MISSION's) purple-black delicate skin contains flesh that ranges from pale to dark pink and has good flavor...Ripe figs give to gentle pressure and often have small cracks in the skin."

Description:
RAMBUTANS are related to lychees and are sometimes known as "hairy lychees". Originally from Malaysia but now grown in tropical Central America and Southeast Asia, they are larger than lychees (about 2 inches in diameter) and look quite different, but have a similar texture. The taste is similar too, but slightly sharper. To prepare, cut around the equator of the fruit with a sharp knife, penetrating the skin only. Lift off the top half of the skin, leaving the fruit on the half shell, like an egg in an (rather hairy) egg cup. They can be added to fruit salads, served with ice cream (coffee ice cream is particularly compatible) or made into jams or jellies, but are best eaten on their own. (This fruit is irradiated in Hawaii for export to the mainland)

The nuts of our Green Almonds are still in the jelly stage. Thinly sliced on a mandoline and tossed into or atop salads, laid out on a plate and sprinkled with Fleur de Sel or shaved onto a Spring Pea Risotto like truffle slices they have a wonderful, bright lemony flavor and a lot of crunch. From Epicurious: “The fuzzy Green Almonds change markedly during the springtime harvest: In April, they're tender enough to eat whole and have a herbaceous taste (like a raw pea pod, but slightly tart and bitter); brined or dipped in salt, they're addictive. Within a few weeks, the hull and shell toughen, and the seed, which hardens from translucent jelly to a crunchy white nutlet, is the only part eaten. ‘Their versatility is staggering,’ says Gregory Brainin of New York's Jean Georges, which serves a tangle of needlefish coated in the jelly of young Green Almonds. He finds the older nutlets have an anise-like flavor, which he emphasizes by matching them with arctic char and fennel compote. Mark Peel of Campanile, in Los Angeles, uses Green Almonds both in pesto and in a brothy fish stew; Judy Rodgers of Zuni Cafe, in San Francisco, serves the shelled nutlets with prosciutto or mild sheep's-milk cheeses. ‘They've got a wonderful satiny texture,’ she says.” Remember the season on Green Almonds is short, so order soon! Also known as Tree Tomato and Arbol de Tomate, the TAMARILLO is a subtropical fruit generally believed to be native to the Andes of Peru and probably also Chile, Ecuador and Bolivia. It is cultivated and naturalized in Argentina, Brazil, Columbia and Venezuela, and is widely grown in New Zealand as a commercial crop. Each long-stemmed, dangling fruit, borne singly or in clusters of 3 to 12, is smooth and egg-shaped but pointy at both ends. The TAMARILLO is 2 to 4 inches long and 1.5 to 2 inches wide. Skin color is red or gold. While the skin is somewhat tough and unpleasant in flavor, the outer layer of the flesh is slightly firm, succulent and bland, and the pulp surrounding the seed in two lengthwise compartments is soft, juicy, and sweet/tart. The YELLOW TAMARILLO is usually a little sweeter than the RED. The edible seeds are thin, nearly flat, curcular, larger and harder than those of the true tomato. Ripe TAMARILLOS may be merely cut in half lengthwise, sprinkled with sugar and served for eating by scooping out the flesh and pulp. The fruit should not be cut on a wooden or other permeable surface, as the juice will make an indelible stain.

Also known as Japanese artichokes, Chinese artichokes, knotroot and Chorogi, CROSNES are an heirloom member of the mint family. But there's no familial resemblence. First cultivated in France outside Paris, near Crosne, these unusually shaped edible tubers were very popular in Europe from their introduction in the 1880s until the 1920s. CROSNES are still cultivated in Europe but we now have California-grown Crosnes! Chefs who have used CROSNES grown in both countries are said to prefer the flavor of United States product, perhaps due to the richer soil here (in France they are grown in sand). Our grower's soil is sandy-loam...which as all you former members of the soil-judging team know, is the best soil for row crops, and we are thrilled with the results! CROSNES are eaten raw (their flavor when raw is somewhere between a potato and jicama with a distinct nuttiness), in salads, or stir fried, boiled, in or on soups, gratineed, as a side dish or garnish.

KYOHO GRAPES are a Concord-like cross between Campbell and Centennial varieties. Grown and prized in Japan for their huge size and very sweet flesh, Kyohos are a blackish-purple variety with large seeds. Their high sugar content is complemented by their moderate acidity. They are one of the most widely planted grape variety in Japan, second only to the Campbell variety. In Japan, a favorite dessert is a bowl of cold, peeled Kyohos. The popularity of Kyohos grown in Japan encouraged growers in Chile and California to plant Kyoho vineyards. As a result, we have access to this specialty grape several times a year.

The Gold Nugget Mandarin is a seedless, sweet tangerine; the first new University of California Riverside (UCR) citrus variety to be released for commercial production since the mid-1980s. More than 30 years in the making, the new tangerine -- also known as a mandarin -- received its descriptive name from its bright orange, slightly bumpy rind. But Gold Nugget is particularly regarded for its rich, sweet flavor. Gold Nugget is a cross between two tangerines -- Wilking and Kincy -- non-commercial varieties also developed at UCR. Although the cross was made in the 1950s, it was not until 1975 that now-retired UCR professors Robert K. Soost and James W. Cameron “selected” the individual seedling that showed the greatest promise for commercial development. Each seedling from a cross between two citrus varieties has a unique genetic makeup. “You can think of citrus genetics being like human genetics,” said Roose, who was assisted in developing Gold Nugget by UCR staff scientists Tim Williams (‘72, ‘76 M.S.) and Ricki Kupper. “When you cross a mother and a father, each of the children are different.”

The Tarocco Blood Orange is known as the sweetest and most flavorful orange of all three varieties (Moro, Sanguinelli and Tarocco) of Blood Oranges. The Tarocco's soluble sugar numbers range from 11.7 to 13.5; 2 to 3 points higher than that of the Moro variety. All three varieties can be traced to the hilly areas and plains surrounding the Mt. Etna volcano in Sicily, and the trees have been easily adapted to inland valleys of California and the desert areas. Although Blood Orange trees grown in California's Central Valley produce fruit with the best interior color, the Tarocco variety is never very red. Its segments look more like a colorful sunrise than a dark, dark red. But what they lack in color, Tarocco Blood Oranges more than make up for in sweet, rich flavor!

It is the consensus of Florida horticulturists that the MURCOTT MANDARIN variety is a tangor of unknown origin resulting from the breeding program of the U.S. Department of Agriculture. According to Robert Willard Hodgson in Horticultural Varieties of Citrus, "The oldest known budded tree, from which the present commercial acreage largely if not entirely traces, still remains on the place formerly owned by a nurseryman, Charles Murcott Smith, in Bayview, Clearwater, Florida, and is thought to have been budded about 1922" (Ziegler and Wolfe, 1961). Under the name Honey Murcott, small-scale commercial propagation was undertaken in 1928. During the past decade, Murcott has been planted rather extensively in Florida. Typical of "common mandarins", Murcotts have thin rind, rather tightly adherent and not readily peelable. The rind surface is smooth to slightly pebbled and the color is yellowish-orange at maturity. The Murcott has a few seeds but because of its rich flavor and deep orange-colored flesh and juice, Murcott is a favorite with gift fruit packers.

Wild GREENGAGE PLUMS were probably introduced to Britain by the Romans, but disappeared from cultivation until Sir Thomas Gage brought them from France in the eighteenth century (and gave them his name). In France, they are known as Reine-Claude after the wife of Francios I, who adored their sweet flavor. These small members of the plum family have green skin, sometimes tinged with yellow or rose pink, which turn golden as the fruit ripens. There are many varieties of GREENGAGE; all have firm flesh and a delicious honeyed flavor. "Transparent" GAGES have fine, translucent flesh; if you hold the fruit up to the light, you can clearly see the shadow of the pit. These GOLDEN GAGES have a particularly sweet flavor. The deliciously sweet flavor of GREENGAGE PLUMS makes them ideal for eating out of hand. They can also be gently poached in syrup, pureed for mousses and fools or made into excellent compotes and jams.

Description:
Stinging Nettles are green-leafed herbs with stinging hairs that leave an itchy rash on the skin when they are touched. There are two varieties: the greater nettle which grows up to 5 feet in height and the lesser nettle which grows to only about 1 foot tall. The lesser nettle (California Wild Nettles shown here) is not just harvested as a wild herb; in Western Switzerland and the Pacific Northwest, it is cultivated as a vegetable. Young leaf tips are cooked as a spinachlike vegetable, pureed for soup, and used to make nettle beer. Because of the highly irritant nature of the raw leaves, Stinging Nettles must be cooked or frozen before serving.

BERGAMOT is a small acidic orange with a peel that yields an essential oil—called essence of bergamot—which is used for perfumes and confections. The peel is used to impart the citrus notes in Earl Grey Tea. It's also candied and used in the same way as other candied fruit peels. Or if you want to get really creative (with thanks to Chef Dan at FreshPoint Central Florida): “Use the zest as you would lemon grass or keiffer lime in a soup, broth or sauce. The flavor is exotic, to say the least. Infusing a custard base for either crème brulee or ice cream works equally as well. However, I have used the zest in seafood risottos, in light butter sauce and have even mixed with green tea and rice and smoked duck Chinese style in a wok. You can slowly dry large strips of the zest and the grind them in a coffee mill, makes a great "dust" for seared day boat scallops....But, besides that it is also cool to make your own Earl Grey tea....”

Description:
The French explorer Samuel de Champlain (1567–1635) found the Sunchoke growing in Indian gardens along the Saint Lawrence seaway and carried specimens of it back to France in 1603. By the late eighteenth century it became a popular vegetable in both Europe and America, though it yielded to the larger potato during the first half of the nineteenth century. The Sunchoke is a lumpy, brown-skinned tuber that resembles gingerroot. A member of the Sunflower family, the "Jerusalem" part of its name is believed to be derived from the Italian word for Sunflower, girasole. Sunchokes can be used in recipes that call for potatoes, and their nutty flavor deserves to be featured. Serve raw in salads or cook in soups, gratins, sautes and purees.
